About us

We like to tell stories, whether in Portuguese, English or Spanish, and we also do our best to tell these stories, from our region and the people who have made our way through innovative recipes.

In the more than 30 years of the journey we have had articles made about our work in several countries and in publications that have received national and international awards. The most important of these is our Amazon Expedition (19 days, 2,800Km through 11 municipalities) published in the book "Expedition Brazil Gastronomic" winner of the Jabuti Prize in Brazil and Gold Medal in China!!

Together with one of the authors of the book - Mrs. Guta Chaves - we were able to demystify the internal differences of Amazonian cuisine in the book "Brazil a Hystory of Flavors", with the support of Scania Brasil.

In tourist services we are certified by quality in the service of the German market - even not speaking German!! by TUV. We had the honor of being chosen to retake the route of Sir Alfred Russel Wallace (British beijinger who in the 19th century braved the Negro River and holds the largest fish publication of this river ever elaborated). The original script of 4 years we redid in 18 days!

We also had the biggest participation in the receptive fifa world cup 2014, when Manaus hosted 4 games, hosting customers for all of them, especially from Portugal, and promoting a unique event for the Swiss population living in Manaus that, in addition to seeing the game of his team in the Amazon Arena could still enjoy an authorial menu of the cuisine of the Alps totally prepared with local ingredients!!

We have partnered with JetSet Sports on the elite team for the best international clients who enjoyed the RIO2016 Olympics. It was more than 30 days of guidance, consulting and an incredible teamwork together with more than 20 professionals, taking care of all the details in each stadium, hotel, restaurant and the beauties of the wonderful city! Of course, with the items of our cuisine being taken to different points in the capital of Rio.

In relation to Gastronomy we were honored by ABRASEL (Brazilian Association of Restaurants) in the first year of college, back there in 2009, for the recipe "Amazonas history". On the occasion of the view of the entity to meet the students who entered the cooking career, instead of a Curriculum I preferred to introduce myself audaciously presenting in the classroom and without prior warning, the preparationd with Alligator Fillet to Coffee Sauce and Chestnuts: The primitive food, the first ingredient introduced by the Portuguese by the Amazon in the country and the greatest highlight of our forest to date!

The result was not a job but open doors to several partnerships with the local gastronomic trade, a live presentation on a TV show and the coordination of Hosts for the event Brasil Sabor that year at the sumptuous Tropical Hotel!

Since then we already count with more than 80 recipes created to describe natural ingredients from local fauna and flora to honor the places where they come from, people and cities related to our journey.

 

And that was just the beginning...

Our products

MURUPI PEPPER OIL

250ml and 500ml green glass bottles

Cold fusion of extra virgin olive oil and murupi pepper, native from the Amazonas, Murupi Olive Oil brings together the best in the nutritional values of both, allowing its harmonization with a wide variety of foods and preparations ranging from starters and snacks to desserts.

 

PATÉS

- GREEN OLIVES WITH MURUPI PEPPER OIL: Green olives have unique creaminess when processed with ricotta and sour cream, seasoned with Murupi Olive Oil. More than the burning of murupi, the reinforcement in flavors and aroma make the pâté can also be served as a pesto in your preferred pasta.

- TUCUMà(Amazonian Palm fruit): one of the most emblematic Amazonian fruits with guaranteed presence in regional coffee services and breakfast buffets is now available in other forms of consumption than in natura. The creaminess of tucumã pâté ensures canapés, snacks and starters the taste of the fruit with very elegant matchings. Filling of ravioli and cannelloni surprises a lot!

- CURD CHEESE: The most traditional cheese produced in the Amazon is one of the best of its kind produced in Brazil, maintaining the Portuguese traditions brought almost 400 years ago. The Paté of Curd Cheese brings with delicacy and texture the potent flavors of Curd Cheese to complete the flavors of your dishes, savory or sweet.

 

EGGPLANTS D. CARMELO AT THE AMAZON

300 g glass pots

Antipasto elaborated from the dehydration of raw eggplant allows its nutrients to be fully preserved leaving the texture of its fibers similar to a roast beef! Submerged in Murupi Olive Oil take on an unmatched flavor that serves as an antipasto or garnish or seasoning for cold or hot dishes.

 

EGGPLANT FLOUR

Plastic pots of 50 g.

Prepared through hot dehydration of pulp and peel under controlled temperature is served in flakes not powdered. It maintains the fibers and nutritional values that helps a lot in the removal of cholesterol from the body. In addition to flavor, it adds texture to its preparations such as sauces, soups, juices and stews.

 

CASSAVA FLOUR "UARINI" WITH MURUPI PEPPER

The traditional texture developed by the Uarini indigenous people in the middle Solimões River, with a taste revered by all amazon cuisine now has one more ingredient: Murupi pepper. In the right dose and added in the last roasting phase of the flour ensures an even more peculiar flavor making the thermogenic flour and excellent for its pirão (Fish souce cream), farofa (Brazilian Style of seasoned fluor) or simple garnish of the most diverse dishes, especially meat and fish.

 

PUPUNHA (Peach palm fruit) FLOUR

One of the largest sources of vitamin A known in nature, in addition to the incredible fatty acids and other nutrients essential for health, the fruits of palm tree “pupunheira” are guaranteed presence in the traditional menus of Amazonas. The Flour of Pupunha of Amigos da Floresta offers this richness to bread, composed with other flours the preparation of pasta, cakes and breads or be added to your dish as a garnish.

The technique of Granolas and Muslims developed in Switzerland in the 19th century and expanded in the United States in the early twentieth century of complete food including fibers, vitamins and proteins was adapted to our ingredients of Amazonian roots. With functional nutritional values, they bring the energy the Açai, the relaxing and invigorating power of bananas, the vitamin-protein of Pupunha and Amazonian Chestnuts and the curative strength of Mangarataia. No additives, preservatives or refined sugars, gluten and lactose free and with lots, lots of flavor!

 

AÇAI SOUCE FOR PASTA

300 g and 500 g glass pots.

Presented in two versions, with and without meat (Vegan), the presence of the most energetic Amazonian fruit with its intense flavor and imposing colour, makes all the difference for short or long pastas and finishing of various appetizers. Very aromatic, long lasting and enveloping flavor carries with it the strength of the forest spirit. Ready for consumption, offers practicality in any situation.

Produced by a community of sustainable living in the municipality of Apuí at the south of Amazonas State, the Apuí Agroforestry Organic Coffee is produced from Robusta beans and with quality attested by IDESAM - Institute of Sustainable Development of Amazonas. Apuí Coffe is free of pesticides, contains no grain mixtures and brings flavor and aroma in the right measure, according to the forest conservation andprotection. Certified by IBD is fully processed and packed by the community.

At first we were just like a artisan who loved to cook! And we did it with the regisytration on the Brazilian Handcraft Program.

 

So we could make presentations of Amazonian culture and cuisine almost all over the country in exhibitions, gaining customers and establishing contacts and partnerships in the main national markets

 

So we decided to do it professionally in a full Brazilian spirit and presence. We developed a network of assistence including food services taken wherever it was posible and bringing people to enjoy the nature and the flavors in gastronomic programs, from Manaus to the entire Brazilian Amazon.

we had the chance to develop Virtual Tourism programs with the partnership of a network of Guides in Brazil , and we make it on demand including gastronomic trips.
